Blueberry Crisp Topping with Crumbles Ingredients
Assemble ingredients for your topping in a small to medium bowl.
Combine the oat flour, rolled oats, brown sugar, cinnamon, and salt.
Add ‘cold butter’ cut in chunks and use your pastry cutter to blend. Cutting in butter is not difficult with the right tools. A pastry cutter cuts your time down significantly versus using the old method with butter knives.

Your topping is ready when it looks lumpy and you can no longer see the butter chunks.
Spoon the mixture on top of the slightly cooked blueberries. You can use your hands but do not scrunch the topping. Distribute evenly on top of the blueberries before placing them in the oven. Do not let the butter turn soft. Place in the oven as soon as the pastry cutting is completed.
This recipe makes plenty of topping which goes well with whipped cream or ice cream when serving.
Place the casserole dish on a baking sheet to prevent spills before baking. Cook at 350 Fahrenheit for 30 to 35 minutes. Crisp should be a light toasty brown when done.

Does blueberry crisp need to be refrigerated? If keeping for more than two days we recommend refrigeration for up to 7 – 10 days. It can be frozen but freezing does slightly alter the final product in taste and texture.

Crispy Blueberry Crumble Recipe
- 1 medium bowl
- 1 small 10 x 5.9 inch casserole dish
- 1 pastry cutter
Blueberry Filling Base
- 1 16 oz bag frozen blueberries
- 2 tsp fresh lemon juice
- 1 tsp real vanilla
- 1/4 cup dark brown sugar
- 1 tsp ground cinnamon
- 2 tbsp GF oat flour
Crispy Crumble Topping
- 3/4 cup GF oat flour
- 1 1/4 cup GF rolled oats
- 2/3 cup dark brown sugar
- 2 tsp ground cinnamon
- 1/4 tsp salt
- 3/4 cup cold stick butter (1 and 1/2 stick butter)
Blueberry Filling Instructions
- Place oven rack to middle or third rack and preheat oven to 350 degrees.
- Prepare casserole dish with a light butter coating on bottom and sides.
- After allowing blueberries to thaw, place them in medium sized bowl.
- Add the lemon juice, cinnamon, vanilla to the bluberries. Toss lightly to coat.
- Sprinkle with oat flour and toss again. Place mixture in prepared casserole dish.
- Place in oven for 10-15 minutes until flour is well dissolved. Remove from oven.
Crispy Crumble Instructions
- Place the measured oat flour, rolled oats, cinnamon, dark brown sugar, and salt in a medium bowl. Toss and mix until all is incorporated.
- Cut butter into 1/4 inch slices and place in the bowl. Take your pastry blend and incorporate until texture resembles lumpy potatoes.
- Do not allow butter to soften. Spoon crispy crumble topping onto the top of the slightly cooked blueberry mixture with a large ladle or use your hands. Make sure the topping is slightly lumpy and do not mash it with your hands.
- Place in the oven still at 350 Fahrenheit for 30 -35 minutes until the topping is firm, lightly toasted and the blueberries are bubbly around the edges.
- Allow to cool with out covering for 30 to 45 minutes. This allows the topping to dry out and the blueberry filling to set. Crisp should still be slightly warm when serving.
- Top with your favorite topping. We recommend sweet whipped cream or vanilla ice cream.
