Texas Steak Rice
This versatile rice recipe is simple and takes very few ingredients. You can add or omit vegetables as desired. Top it with a little fresh parmesan and cracked black pepper for even more flavor. Serve with your favorite cut of steak. This versatile rice dish goes equally well with your favorite BBQ dish, other meat dishes, and even beans!

2 cups beef stock 1 cup long grain white rice 1 tbsp cooking oil 1/2 cup frozen baby peas 4-8 medium to large sliced mushrooms 1/2 cup chopped white onion 1/2 tsp chili powder 1/4 tsp salt 1 dash stone ground black pepper
Place beef broth in stock pot and bring to a boil.
Reduce heat and add rice.
Cover pan and cook on low heat for 20 minutes.
Place oil in skillet and heat to sizzling, adding onion and mushrooms.
Reduce heat to medium and sauté vegetables for 5 minutes
When rice is done, add it to the skillet along with frozen peas, spices, salt and pepper.
Heat through for 4 to 5 minutes until peas are tender.
