Equipment

  • 2 small to medium mixing bowls
  • 1 medium skillet

Ingredients
  

  • 1 cup flour for GF - use gluten-free flour
  • 1 tsp baking powder for GF - use gluten-free baking powder
  • 1 tbsp sugar (optional) for GF - gluten-free pure cane sugar
  • 1 medium egg **see substitute in note below
  • 1 cup pure milk *see note below
  • 1 tbsp pure cooking oil for batter you can use oil of your choosing

Cooking and Serving

  • 1 tbsp pure cooking oil for cooking pancakes
  • 1 pat pure butter or more as desired
  • 1/8 cup pure maple syrup or topping(s) of your choice for GF - use gluten free maple syrup

Instructions
 

  • Add dry ingredients - flour, baking powder, and sugar to the first bowl and mix lightly.
  • Add wet ingredients to the second bowl - egg, milk, and oil, beating lightly to incorporate.
  • Add wet ingredients to the dry ingredient bowl and mix lightly leaving a few lumps in your batter.
  • For each pancake use approximately 1/2 cup batter or less as desired, depending on the preferred size of pancakes.
  • Heat a medium skillet starting at high temperature and quickly lowering it to medium-high. Add cooking oil during high heat then lower the temperature to the medium temperature setting. Add batter and cook to desired brownness. Flip the pancake and cook the other side to the desired doneness.

Notes

*Note: This recipe is created for a thicker pancake however, you can add more liquid if you like a thinner batter. If adding additional liquid we recommend adding just a tablespoon at a time.
**Note: Looking for an egg substitute for your pancake recipe? Try mixing 1 tablespoon of ground flaxseed with 3 tablespoons of warm water and whisking with a fork until combined. Let the mixture sit in the fridge for 5 to 10 minutes before using it as a substitute for 1 egg in any baked recipe. This vegan-friendly alternative will give your pancakes the same fluffy texture without the use of eggs.
